Banana Bread

120g extra virgin olive oil


4 ripe bananas


150g sugar


3 large eggs


2 tsp vanilla extract


100g ground almonds


110g spelt flour


half tsp salt


half tsp baking powder


50g sultanas


100g mixed seeds



1lb loaf tin



Preheat the oven ton 180°.


Lightly oil the base and sides of a 1lb loaf tin and line with baking parchment.

In a bowl, mash 3 of the bananas with a fork, leaving a few small chunks. Add the sugar, oil, eggs and vanilla, mix untilsmooth.


In a separate bowl mix together the flour, ground almonds, salt, baking powder, sultanas and seeds. Pour in the wet ingredients and mix until 

it all comes together.


Pour the batter into the prepared loaf tin, slice the remaining banana in half 

lengthways and place on top of the mixture.


Bake in the oven for 55 minutes until golden. Insert a skewer into the centre of 

the loaf, it should come out clean. Once cooked, remove from the oven and 

rest for 10 minutes before turning out onto a wire rack.
