Roast Fruit Toast

3 plums


1 tsp demerara sugar


splash of good quality thick balsamic vinegar


2 thick slices of sourdough bread


labneh - see recipe section


2 tbsp granola


honey for drizzling


Preheat the oven to 200°C.


Make the labneh in advance as per the recipe on the website.


Start by preparing the fruit. Half and stone all the plums, lay cut side up in 

a small roasting tin. Sprinkle the fruit with the sugar and drizzle with 

balsamic vinegar. Roast in the oven for 20 minutes.


Towards the end of cooking put the sourdough bread into a toaster or pop under a grill. Once the bread is toasted and golden put onto separate plates.


Take the labneh and spread nice and thick onto the toast, take your roasted fruit from the oven and lay 3 halves on to the top.


Drizzle each slice with honey and sprinkle over the granola for extra

crunch - a great start to the day!
